It’s been a little over a year since the last time I tried to make sourdough bread from a wild yeast starter. The last attempt was a complete disaster, ending in a loaf that raised only a hair and was so sour that it was inedible. It took this long for me to get sufficiently tired of buying yeast when the stuff is floating all around us to try it again. This time it was much more thought out and controlled, but my first attempt was still fraught with a few mistakes.
