I'm wondering why "the universe" doesn't count as the all-inclusive category whose essence explains the nature of all things?

Since the notion of the essence of the universe is hard to make sense of, it is unlikely that it will serve to explain anything. It is surely more obscure than anything it might be used to explain. You cannot explain the obscure by the more obscure.
