Default Spinach and Tomato Squash spaghetti

spaghetti squash (4 pounds)
2 tablespoons olive oil
1 cup chopped onion
1 tbs minced garlic
2 cups raw spinach
1/12 cup cherry tomatoes halved
2 tbs fresh basil 3 or 4 is dry
Optional( 3 tbs sliced olives) ewww olives
3/4 cups parmasian cheese
Cut spaush in half peheat @ 400 gease tray open side down baked 30 mins or untill tender enough for a knive to easily go through.
Let cool while colling

fry onions garlic
put in tomatoes and spinach and remove from heat
take a fork and scrape the insides out it will come out like strands
in bowl mix strands and everything else
mix in cheese.
serve hot/warm
left overs (do not micro wave) eat chilled. to retain crispness and flavor

Spag squash is one of my faves. Never tried it with spinach but will do. I've microwaved the squash when I still had a microwave. Now I cut in half and steam; saves energy done on stove top rather than in oven. Also I use Romano instead of Parmesan but the kind made in Italy since that is for sure sheep's milk and not cow's.
