Default Opportunist, Impromptu Soup Recipes

A kind friend brought me a large box filled with canned and dried foods. Now, I'm not much on canned veg as they tend to be soggy. However, I decided to make vegetable soup, 2 kinds, for stocking up the freezer.

1. Canned mixed veg: rinse the 2 cans well, put in stove top pot. Add onion, garlic, dried herbs from garden, a few spices, a dash of olive oil, water. When onions are cooked, soup is done. Store a meal's worth apiece in mason jars, then freeze.

2. One can each, well rinsed, into slow cooker: garbanzos, carrots, green beans. Add onion, garlic, garden herbs, spices, dash of olive oil. Add half a bag of egg noodles and water to cover. When noodles are cooked al dente, soup is done. Store a meal's worth apiece in mason jars, then freeze.

In either case, you can freeze or eat right away. Both recipes can be done either stove top or slow cooker; stove top is fast for impromptu meals such as might be needed when unexpected guests arrive. Both follow that old principle of using what's in the house. The idea is to use whatever's around, toss in seasonings as desired, toss in some already cooked meat, or fry up some bacon to crumble in.

Leave out the noodles and put in a can of corn or cut up some potatoes.

I like this! Thanks! Never thought of sticking jars in the freezer with soups. Too stuck in "you don't put glass with liquids in the freezer", I guess.

Just make sure they're canning type jars, Bell or Maxon kinds. I use glass rather than plastic to store foods either dry, cold, or frozen.

That makes sense, since plastic is not the healthiest material to store your food in.
